You simply can’t make mojo pork and not make Cubano sandwiches with the leftovers. It’s an easy, delicious meal to lets you use up all your delicious leftovers. Be sure to watch Jon Favreau's movie Chef before you do for inspiration.

Keto Cubano Sandwiches

Ingredients:

  • butter, salted
  • keto bread, formed into baguette loaves and baked in an oven preheated to 375F for 10 minutes then turned down to 300F for 30-45 minutes, depending on size of loaves)
  • Cuban mojo pork, thinly sliced
  • ham, thinly sliced
  • Swiss cheese
  • dill pickles, sliced lengthwise
  • yellow mustard

Directions:

  1. Butter inside of your keto baguette loaves and then slater the inside with butter and toast on a large skillet until golden brown. Remove from skillet and place on a cutting board/work surface.

  2. From bottom up, build your sandwiches in this order: 1) mojo pork slices 2) ham slices 3) Swiss cheese 4) pickles slices. Slather mustard on the inside bun top from edge to edge on top bun. Close sandwich. Generously brush melted butter on top and bottom of the sandwich. Place in a preheated sandwich/panini press and press (*See note below.) until outsides are golden and cheese is melted. If using longer 9-inch loaves (the traditional length), slice the sandwich into 3 pieces. Serve immediately with Cuban yellow rice.

**Note:* If you don’t have a sandwich press, you can create one on your BBQ like I did using grill mats and a baking sheet weighted down with hand weights. Just make sure the baking sheet is heated up. You could also do this on the stove top with a griddle and baking sheet heated in the oven. See the photo below for how this works.
