Every so often I get a hankering for a Filipino breakfast, complete with longanisa sausages. But such a breakfast is incomplete with a staple: garlic fried rice. As such, I threw together my own low-carb version of it using cauliflower rice instead. It hits all the right notes so that I can have my sausage and eat it too, and not feel like I'm missing out.
Keto Filipino Garlic Fried Cauliflower Rice Recipe
- 4 cups cauliflower rice
- 3 tablespoons avocado oil
- 10 cloves garlic, chopped
- Kosher salt and freshly ground black pepper
- 2-3 scallions, sliced
- ½ teaspoon toasted sesame seeds (*optional garnish)
Heat avocado oil in a large skillet or wok over medium heat. Add garlic and fried until lightly golden and a little crispy. Remove from skillet and add to a paper towel to drain.
Add the cauliflower rice, salt and pepper, and stir-fry over medium heat, stirring often until cauliflower rice is tender-crisp, around 3-4 minutes.
Remove from heat and stir in green onions and cooked garlic. Taste and add more seasoning if necessary. Garnish with sesame seeds if using and serve hot.
