This is my go-to keto dish for when I’m craving pizza. Personally, I would rather get the vegetables in than to go to the trouble of making a Fathead pizza crust that doesn’t measure up to a real flour-based crust. These are tasty, easy to make, and are always a welcome party appy dish.
Keto Zucchini Pizza Bites Recipe
Ingredients:
- 1 medium zucchini, sliced ¼” thick
- Mozzerella cheese, thinly sliced
- pepperoni slices
- Keto marinara sauce
- grated Parmesan (freshly grated is best if available)
- dried basil
- chili flakes
Directions:
Spread zucchini evenly on a pan sprayed with cooking spray and place under broiler for 1-2 minutes.
Flip zucchini over return to under the broiler for 1-2 minutes.
Remove the zucchini from oven and top with cheese slices, ½-1 teaspoon marinara sauce, and pepperoni.
Return under the broiler just until cheese is melted. Garnish with Parmesan cheese, basil and/or chili flakes if desired and serve.
