Looking for a hearty, filling salad that gives you the flavours and textures of a loaded Italian sausage bun served with sautéed peppers? Well, this is the salad form of that meal, making it a delicious alternative to a bun-based meal for lunch or dinner.
Keto Sautéed Pepper and Sausage Salad with Fennel Recipe
Ingredients:
- 500g Italian sausage, casings removed (*I like to use hot vs. mild, but choose what you prefer.)
- One medium bell pepper, cut in ½" strips (*Coloured is better than green, but feel free to use multiple colours for variety.)
- ½ red onion, thinly sliced
- ¼ cup dry white wine
- 2 tablespoons avocado oil
- 4 garlic cloves, smashed and peeled
- 4 slices keto bread
- 1 head romaine lettuce, chopped into 1½ " pieces
- 1 small fennel bulb, very thinly sliced
- 1 tablespoon white wine vinegar
- Flaky sea salt (like Maldon or Fleur de sel and freshly ground black pepper, to taste
- ¼ cup shaved Parmesan or Pecorino Romano
Directions:
In large skillet, sauté sausage meat. Use a spatula to break the pieces up, cook until golden brown and with some crispy bits, around 10 minutes. Remove from the pan and add to a plate lined with paper towel.
Add the peppers and red onion to the same pan. Sauté to soften, around 5 minutes. Deglaze the pan with the wine, cooking to reduce it to a slight glaze on the peppers. Add pepper mixture on the plate on top of the sausage.
Add 1 tablespoon avocado oil and the garlic to the pan. Bring the garlic to a sizzle, and remove from pan before it browns. Add bread and cook to golden on one side, around 2 minutes. Drizzle the remaining olive oil over the up side of the bread, turn, and continue cooking until crisp.
Add lettuce and fennel to a large bowl. Add the sausage and pepper mixture. Drizzle vinegar overtop and sprinkle with salt and black pepper. Toss well and serve warm in a large salad bowl topped with the shaved Parmesan or romano with the crusty garlic bread on the side. Garnish with chopped fennel fronds if desired.
