Looking for a different spin on a classic spinach dip? This low-carb spinach, ham and Manchego dip brings on board creaminess with a bit of bite from the Manchego and a bit more heft from the ham, making it a dip that leaves no leftovers after the party.

Keto Spinach, Ham and Manchego Dip Recipe

  • 2 tablespoons butter, unsalted
  • ⅓ cup yellow onion, diced
  • ½ teaspoon sea salt
  • ¼ teaspoon paprika
  • ⅛ teaspoon freshly ground black pepper
  • 1 large pinch nutmeg, (freshly grated if possible)
  • ¼ teaspoon xanthum gum
  • ¾ cup heavy cream
  • ¾ cup unsweetened unsweetened almond milk
  • 1 ½ cups Manchego cheese (*If unavailable, substitute with Parmesan, Romano or a sharp white aged cheddar), divided (1 cup/½ cup)
  • 4 cups fresh spinach (around one small bunch), chopped (*Use one package if using frozen spinach.)
  • ½ cup diced serrano ham (*Or any other unsweetened ham, if unavailable.)
  • Additional sea salt
    Additional paprika and nutmeg, (freshly grated if possible), for garnish

Directions:

  1. Melt butter in a large sauce pan over medium heat. Add diced onion and sea salt and sauté until translucent.

  2. Turn heat down to low and add paprika and nutmeg, stirring until fragrant. Stir in spinach a little at a time and cook until wilted.

  3. Whisk together xanthum gum with 3 tablespoons of the almond milk then stir into saucepan. Stir in the remainder of the almond milk and heavy cream a little at a time. Stir in the ham and cheese and cook through until cheese is melted and sauce has thickened. Add additional sea salt and black pepper to taste if desired.

  4. Pour the mixture into an oven-safe bowl. Top with remaining shredded cheese. Store in the fridge until ready to use.

  5. Take the dip out of the fridge and allow to come to room temperature while you preheat your oven to 400F. Bake for 10-12 min or until top is browned and dip is bubbling. Top with a spinkle of paprika and nutmeg. Allow to set for 10 minutes before serving with keto bread, keto crackers, keto tortilla chips, pork rinds or cut veggies. (*Do NOT skip this step! The consistency is way better if you let it cool a bit.)
