
Choripan is a traditional Argentinian street food/BBQ sandwich made with grilled chorizo sausage and chimichurri sauce. While I opted to use a lettuce bun, it would be even better on a nice keto bun if you have them on hand. Top with pickled onions/cabbage and you're in flavour country!
Keto Argentinian Choripan Recipe
Ingredients:
- 2 chorizo sausages
- 2 keto rolls or lettuce for wrapping
- 2-3 tablespoons chimichurri sauce
- ¼ cup keto pickled onions/cabbage
Directions:
Grill the chorizo sausages as per the package directions. When they are nearly cooked, sliced them down the centre, length-wise and grill the cut side until you get grill marks. (*You can leave the sausage uncut if you prefer, depending on the size and shape of your bun or lettuce wrap.)
Add the chorizo sausage to a keto roll or lettuce wrap. Spoon chimichurri sauce over the sausage, top with pickled onions/cabbage, and dig in!
