Avocado, mackerel (or tuna), egg, and cheese come together to make this awesome finger food snack or appie. Dip ‘em and pop ‘em in your mouth! With the right dipping sauce, even kids will dig them... or at least I think so? What do I know, I don’t have kids, but I think I might have liked them as a kid. You know your kids better than me. You tell me! :)
Keto Avocado Mackeral (or Tuna) Balls Recipe
Ingredients:
- 240g canned mackerel (i.e. one large can of mackerel or 2 small cans drained, may swap with tuna too.)
- 1 tablespoon homemade mayonnaise
- 1 tablespoon avocado oil
- 1 tablespoon nutritional yeast
- 1 teaspoon golden flaxmeal
- 1 large egg, lightly beaten
- 1 small avocado, cubed
- ¼ cup Pecorino Romano or Parmesan cheese (*Sub with vegan parmesan for dairy-free.)
- ¼ cup almond flour or ground lupin for meat-free.
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- 2 teaspoon fresh chives, finely chopped
- ¼ teaspoon crushed red pepper flakes
- ¼ teaspoon fine sea salt
- Freshly ground black pepper, to taste
- ¼ cup avocado oil or refined coconut oil
Directions:
Combine tuna, mayonnaise, parmesan cheese, and spices to a bowl and mix well (except avocado and coconut oil) into a medium mixing bowl.
Cube avocado and fold into the tuna. Form tuna into balls and cover with almond flour or lupin flour.
Heat avocado oil or coconut oil in a pan on medium heat. Once hot, add tuna balls and fry until browned on all sides. Serve hot with chipotle mayo your choice of dipping sauce.
