
A long-time favourite amongst the keto community, you can't go wrong with this winning combo. Bacon-wrapped cheese-stuffed jalapeño poppers are a party favourite that all your guests will enjoy, keto or not... Well, maybe not vegetarians, but everyone else!
Bacon-Wrapped, Cheese-Stuffed Jalapeño Poppers Recipe
- 8 medium-sized jalapeño peppers
- 1/3 cup (3 oz) sharp cheddar, shredded
- 1/4 cup (2 oz) cream cheese
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 8 slices bacon, halved
- Coconut oil cooking spray or (*avocado oil spray also works)
Directions:
Preheat the oven to 400F. Cut each pepper in half and remove the inner ribs and seeds, trying to keep the pepper itself intact.
Use a fork to mash together the cheddar, cream cheeses, garlic powder and black pepper in a small bowl.
Stuff the cheese mixture into each pepper half. Make sure the cheese is fully contained in each slice to avoid it spilling over as it melts.
Wrap a slice of bacon around the outside of each pepper Lightly spray each popper with cooking oil spray.
Arrange the poppers on a large baking sheet and bake until the bacon is crispy, about 20 minutes. You can broil the poppers for a couple minutes at the end if you want to brown them more. Allow to cool slightly before putting them out, but serve warm.
