
Summer is not quite over yet! So why not throw a whole salmon on the grill? It’s got to be one of the easiest ways to do it. This BBQ sage and rosemary stuffed salmon was so easy. I just had to pick the herbs from my garden and I was off to the races!
Keto BBQ Sage and Rosemary Stuffed Salmon Recioe
Ingredients:
- 1 small lemon, sliced
- 1 teaspoon avocado oil
- Large pinch black pepper
- Large pinch Kosher salt
- 2 sprigs fresh rosemary
- 1 handful fresh sage leaves
- 2 cloves garlic, thinly sliced
- One whole salmon (*I used a 1 lb fish for the amounts listed above.)
Directions:
Set the temperature to about 400-425 degrees over indirect heat and allow your grill to preheat while you prepare the salmon. I also like to use a grill mat that’s been oiled to make clean-up easier. Clean the salmon and wash the inside and outside. Score the salmon on both sides, not too deep.
Fill the scores and belly with garlic slices and sage leaves, rosemary, and lemon slices. (*Because I used a smaller fish, I only put the garlic slices in the scores.) Rub avocado oil all over the skin and sprinkle with salt and pepper.
The size of the fish will determine how long to cook it; 10 min per inch of thickness at the thickest part is a good rule of thumb. If you have a 5lb salmon, expect to give it 40 minutes of total cooking time. After about half the total cooking time, wearing oven mits, gently flip the whole fish to it’s other side away from you and straight onto the oiled grill (or grill mat).
Check the thickest part of the fish early. You want to remove the salmon from the BBQ when this part is still rare (around 125F) as it will continue to cook after you remove from the BBQ. The belly parts will cook faster and you don’t want to overcook them.
When done, use two spatulas or silicon oven mitts to carefully remove the whole salmon from the grill to a serving platter or cutting board and let sit covered with foil for a few minutes before serving.
