Some desserts are just good eating. Some are designed to put on a show. This keto-friendly sangria gelatin ring dessert does both, and with a slightly boozy kick too. Suspend your favourite berries in gelatin made using a low-carb white wine spritzer as the base. It is a wonderfully festive addition to any spring or summer party.

Keto Berry Wine Spritzer Jello Ring

Ingredients:

(*Note: Do not thaw the berries before using to avoid discoloring the gelatin.)

Directions:

  1. Add wine to a pot and heat over medium heat to get it just before boiling point. Stir in sweetener until dissolved and remove from heat.

  2. Add frozen berries to a 6-cup ring mould coated with cooking spray. In a large heatproof bowl, add hot wine mixture to gelatin; stir 2 minutes or until completely dissolved. Stir in club soda. Pour gelatin solution into the ring mould. Refrigerate until set, around 3 hours. When ready to serve, unmold onto a serving platter when ready to serve.
