Blueberry Mint Goat Cheese Dip Recipe
- 4oz soft goat cheese, room temperature
- 3 tablespoons unsweetened coconut milk beverage (*Or any non-dairy milk.)
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon Lakanto granulated monk fruit sweetener, powdered in a spice grinder
- ¼ teaspoon ground ginger
- ⅛ teaspoon nutmeg, (freshly grated if possible)
- Large pinch flaky sea salt (like Maldon or Fleur de sel
- 2 teaspoons fresh lime juice
- 1 teaspoon lime zest
- ¼ cup fresh or frozen blueberries
- 1 tablespoon slivered almonds
Directions:
Combine goat cheese, coconut milk beverage, sweetener, and lime juice, ground ginger, nutmeg, and flaky sea salt. Beat together with an electric hand mixer on low until smooth.
Stir in mint leaves and lime zest until fully incorporated. Add the blueberries and gently stir in until fully incorporated.
Top with slivered almonds and a few extra blueberries, fresh mint and a little grated nutmeg for garnish, if desired.
