
This blueberry mint goat cheese dip is a nice change of pace from the usual sweet dips, combining tangy goat cheese, the deep-sweet flavour of blueberry, refreshing mint, along with the bright flavour of lime. The nutmeg and ginger also complement all the other flavours, while the garnish almonds give it a satisfying crunch, making it a complete package as far as keto-friendly sweet dips go.
Blueberry Mint Goat Cheese Dip Recipe
- 4oz soft goat cheese, room temperature
- 3 tablespoons unsweetened coconut milk beverage (*Or any non-dairy milk.)
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon Lakanto granulated monk fruit sweetener, powdered in a spice grinder
- ¼ teaspoon ground ginger
- ⅛ teaspoon nutmeg, (freshly grated if possible)
- Large pinch flaky sea salt (like Maldon or Fleur de sel
- 2 teaspoons fresh lime juice
- 1 teaspoon lime zest
- ¼ cup fresh or frozen blueberries
- 1 tablespoon slivered almonds
Directions:
- Combine goat cheese, coconut milk beverage, sweetener, and lime juice, ground ginger, nutmeg, and flaky sea salt. Beat together with an electric hand mixer on low until smooth. 
- Stir in mint leaves and lime zest until fully incorporated. Add the blueberries and gently stir in until fully incorporated. 
- Top with slivered almonds and a few extra blueberries, fresh mint and a little grated nutmeg for garnish, if desired.
