I just LOVE poke bowls, and want to be able to enjoy keto-friendly versions of them at home on the fly, but sashimi grade fish requires trip to a specialty store, plus it can be a bit pricey if you’re in a budget. That’s why I came up with my own budget version using canned tuna and other ingredients I normally have in my cupboard. Feel free to swap out different veggies depending on what you have on hand since part of poke is to tailor it to your own tastes.
Keto Budget Bites Rainbow Spicy Tuna Poke Bowl Recipe
Seaweed Salad Ingredients:
- ¼ cup dried wakame
- ½ cup cold water
- 2 tablespoons unsweetened rice vinegar
- 2 tablespoons tamari soy sauce or coconut aminos
- 1 teaspoon sesame seeds, toasted
Directions:
Rehydrate dried wakame in ½ cup cold water until softened, around 15-20 minutes. Slice to your desired consistency.
Drain the water and mix in the rice vinegar and tamari soy sauce. Allow to sit for 5 minutes, then drain, retaining the sauce so you can use it in your ponzu sauce. Store in the fridge until ready to use.
Ponzu Sauce Ingredients:
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- Reservee tamari soy sauce and rice vinegar from seaweed salad.
- 5 drops liquid stevia (or to taste)
- ½ teaspoon toasted sesame oil
Directions:
- In a small bowl, whisk together all the above ingredients. Store in the fridge until ready to use.
Spicy Canned Tuna Ingredients:
- One small can of flaked tuna
- 1 tablespoon tamari soy sauce or coconut aminos
- ½ teaspoon toasted sesame oil
- ½ teaspoon sriracha
Directions:
- Stir together all the above ingredients in a small bowl. Store in the fridge until ready to use.
Sriracha Mayonnaise:
- 2 tablespoons homemade avocado oil mayo
- 1 teaspoon sriracha, or to taste
- Unsweetened coconut milk beverage (*Or other unsweetened non-dairy milk.) (if desired)
Directions:
- Whisk together the above ingredients in a small bowl. If you wish to thin out the sauce a little, whisk in a little coconut milk beverage. Store in the fridge until ready to use.
Imitation Crab Stick Salad:
- 4 crab sticks, julienned
- 1 tablespoon homemade avocado oil mayonnaise
- White pepper, to taste
Directions:
- Whisk together the above ingredients in a small bowl. If you wish to thin out the sauce a little, whisk in a little coconut milk beverage. Store in the fridge until ready to use.
Poke Bowl Ingredients:
(*Note: Feel free to mix and match any of the below ingredients to your own taste.)
- Poke bowl base: Mixed greens, zucchini noodles or cauliflower rice (*I prefer one of the first two options.)
- Cucumber, thinly sliced
- Purple cabbage, thinly sliced
- Avocado, sliced
- Cherry tomatoes, halved
- Orange bell pepper, thinly sliced
- Homemade keto pickled daikon (*Or kimchi for a spicier pickle option.)
- Shelled edamame
- Fresh sliced jalapeño peppers
- Green onions, thinly sliced
- Fresh cilantro
- Toasted sesame seeds (*Or keto "everything bagel" seasoning" seasoning for a different twist.)
- 2 sheets roast nori, thinly sliced
Poke Bowl Assembly Directions:
(*Note: The above ingredients should be enough to make two poke bowls or one mega bowl.) Add a layer of your chosen poke bowl base to a large bowl. Toss ponzu sauce to your liking.
Add your spicy canned tuna to the centre of the bowl. Arrange your seaweed salad and crab stick salad around the edge of the bowl, then add any of the additional veggie toppings, arranging them prettily around the bowl.
Drizzle sriracha mayo overtop. Sprinkle with green onions and cilantro, toasted sesame seeds and roasted nori to your taste. When ready to eat, toss the poke bowl to blend all the ingredients together.
