Candied pecans are a holiday classic. But who wants all that sugar on a keto diet? This low-carb version of candied pecans give you everything you love about this sweet treat but without all the sugar.
Keto Candied Pecans Recipe
Ingredients:
- 1½ cups whole raw pecan halves
- ¼ cup unsalted butter (*Or coconut oill for vegan.)
- ¼ cup Swerve Brown or Sukrin Gold
- ⅛ teaspoon ground cinnamon
- ½ teaspoon pure vanilla extract
- Flaky sea salt (like Maldon or Fleur de sel), to taste
Directions:
Melt the butter or coconut oil in a saucepan over medium heat. Once the butter is melted, add the sweetener to the saucepan, and stir constantly until melted. Add in vanilla extract and stir to combine.
Lower heat to medium-low and continue to cook down the mixture, stirring frequently for 5-7 minutes until it begins to thicken.
Remove the saucepan from the heat, and add in the pecan halves. Toss to coat them all well.
Spread the coated pecans in a single layer on a parchment paper or silicon mat lined baking sheet. Sprinkle generously with flakey sea salt.
Put the pecans in the refrigerator for 1-2 hours to cool and harden. Once ready, break apart any chunks of pecans and serve or use to garnish other dessert recipes. Store in an airtight container.
