This low-carb caramelized onion goat cheese creamy sauce has a hint of sweetness paired with the bold, creamy flavour of goat cheese. It goes well spooned over cooked veggies, but my favourite is with my keto-friendly Scandinavian meat balls. It takes a bit more time to make with the process of caramelizing the onions but the reward of the natural sweetness that comes with it is worth the effort, making this an elegant addition to any meal.

Ingredients:

Directions:

  1. Heat the oil in a skillet over medium heat. Add the onions and fry for a couple of minutes until they start to soften. Turn the heat down to medium-low and continue to cook for 20-25 minutes, stirring regularly till the onions are a deep brown and sweet.

  2. Stir coconut flour in with the onion; cook, stirring constantly, for 1 minute. Gradually pour ¾ cup almond milk into the saucepan stirring well into the onion mixture.

  3. Add goat cheese and stir to melt. Stir remaining milk into the mixture, ¼ cup at a time, and cook until you reach your desired consistency, around 5-10 more minutes. If it thickens too much for your liking, add a little more almond milk. If desired, blend with an immersion blender to give the sauce a completely smooth consistency. Season with salt and white pepper to taste.
