Looking for a little something different to make a baked soft cheese pop? This keto-friendly caramelized onion jam gives a lovely sweet-savoury topping as an alternative to the usually much sweeter jams and jellies.
Keto Caramelized Onion Jam Recipe
- ¼ cup avocado oil
- ½ cup xyliytol
- 4 cups onion, coarsely chopped
- ⅛ teaspoon flaky sea salt (like Maldon or Fleur de sel)
- Freshly ground freshly ground black pepper (to taste)
- ⅔ cup red wine vinegar
- 10 drops liquid stevia (or to taste)
Heat avocado oil in a heavy skillet over medium heat.
Stir xylitol into the oil with a wooden spoon, stirring constantly until xylitol is melted and mixture is steaming. It should be very hot.
Stir onion, salt, and black pepper into xylitol mixture. Onions will immediately start to caramelize. Stir frequently over medium heat onions are browned, around 15 minutes.
Pour red wine vinegar into onion mixture, reduce heat to medium-low, and simmer until mixture has a jam consistency, about 30 minutes. Taste it at this point and stir in liquid stevia drops to your taste if desired.
Allow to cool then store in the fridge. Serve over baked Brie or other soft cheese. Try adding a drizzle of keto-friendly sugar-free maple syrup and balsamic vinegar to make it an even more decadent treat.
