Keto Chipotle Herb Seared Steak Chimichurri Cauliflower Rice Bowl Recipe

Steak Ingredients:

  • 1 tablespoon avocado oil
  • 8oz top sirloin steak
  • Flaky sea salt (like Maldon or Fleur de sel, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, smashed
  • 1 tablespoon chives, chopped
  • 3 tablespoons fresh oregano, finely chopped
  • 4 fresh basil leaves, finely chopped
  • 1 tablespoon chipotle adobo sauce

Cauliflower Rice Bowl Ingredients:

Directions:

  1. Sprinkle the surface of the steak with flaky sea salt at least 45 minutes before you plan to cook it (overnight is even better if you can). Remove steak from fridge 20 minutes before cooking to allow it to come to room temperature.

  2. Heat a large skillet over medium-high heat. Add avocado olive oil. Generously season steak with black pepper then add to the pan when the avocado oil is fully heated.

  3. Add the butter, garlic, herbs, and adobo sauce and cover steak, rubbing the herbs through the adobo butter sauce to coat. Sear for 3 minutes before flipping.

  4. After flipping the steak, baste continuously for 3 minutes to reach a medium-rare temperature. Remove steak from pan and allow to rest while you assemble the rest of your ingredients.

  5. Arrange your cauliflower rice and mixed greens into 2 bowls. Add the steak to the centre then arrange the avocado, diced tomatoes, sautéed mushrooms, and pickled onions and cabbage around the bowl. Drizzle the chimichurri sauce over the steak. Season everything with flaky sea salt and freshly ground pepper and serve.
