When you’re using high-fat keto tortillas, it’s nice to use a lower fat taco filler to balance things out. These chipotle-lime shrimp tacos are smack in the middle of Mexican flavour country, and get a creamy boost from the accompanying aioli.
Keto Chipotle-Lime Shrimp Tacos Recipe
Taco Filling Ingredients:
- 1lb uncooked shrimp medium-sized, peeled and de-veined
- 1 tablespoon avocado oil
- 1 teaspoon smoked paprika
- 2 teaspoons chipotle sauce
- 4 garlic cloves, minced
- Juice from 1 lime
- Flaky sea salt (like Maldon or Fleur de sel and freshly ground black pepper (to taste)
Chipotle-Lime Aioli Ingredients:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1-2 tbsp chipotle peppers in adobo sauce](https://amzn.to/2IhBKHC) (with 1 teaspoon sauce), finely chopped, finely chopped
- Flaky sea salt (like Maldon or Fleur de sel
Directions:
In a large bowl, toss together the shrimp, avocado oil, lime juice, garlic, smoked paprika, chipotle sauce, and salt & pepper.
Make sauce by whisking together there mayonnaise, sour cream, and chipotles. Set aside.
Heat large skillet over medium high heat, and mist with non-fat cooking spray. Add in shrimp, and cook until no longer pink, and slightly browned.
Spread about 1/2 tbsp of sauce onto each keto tortilla. Top each keto tortilla with shredded green cabbage, diced green onion, diced tomato, avocado, and fresh cilantro, or whatever else you like. Makes 8 tacos.
