I just can't get enough cranberries at this time of year, so I came up with this low-carb, keto-friendly cranberry meatball recipe to serve at a party, using ground chicken or turkey as the base, then added the complementary flavours of cranberries, walnuts, blue cheese and ginger with an added cranberry glaze for a full-on holiday combination for this lovely meatball recipe. A perfect Christmas appetizer!

Keto Cranberry Walnut Blue Cheese Meatballs Recipe

Meatball Ingredients:

  • 1 lb ground turkey or chicken
  • ½ cup almond flour
  • 1-4 tablespoons coconut flour
  • 1 large egg
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 teaspoon fresh ginger, minced
  • 3 tablespoons blue cheese, crumbled
  • 2 tablespoons walnuts pieces, chopped, finely chopped
  • ¼ cup fresh cranberries, chopped
  • 2 tablespoons fresh parsley, chopped

Cranberry Glaze Ingredients:

Directions:

  1. Preheat oven to 375F. Then start working on the meatballs. Add all of the meatball ingredients, except the coconut flour, to a medium mixing bowl and mix gently but thoroughly. If the meat is quite wet, add in the coconut flour one tablespoon at a time until the meat is at a good, workable consistency for forming meatballs.

  2. Form into 16 meatballs and place on a baking sheet lined with a silicon mat.
    Bake for 8 minutes, flip, then put back in for another 8 minutes or until cooked through.

  3. While the meatballs are cooking, make the glaze. Combine the cranberries, water and sweetener in a small saucepan. Bring to a boil, lower the heat, and simmer for around 8 minutes or until the cranberries start to burst.

  4. Pour the glaze into a blender and puree. Pour through a fine strainer to remove the bits of skin and seeds. Return to the saucepan and whisk in the glucomannan (if needed). Add the meatballs and toss gently to coat in the sauce. Serve warm or chilled.
