I'm all for Christmas-themed loaves like the classic gingerbread loaf. They make great gifts and are a lovely treat in place of the usual coffee cake for those last-minutes pop-ins or to bring to share at a party. This low-carb, keto-friendly version is just what you need to be social, but still stay in ketosis.
Keto Gingerbread Loaf Recipe
Ingredients:
- ⅓ cup [Swerve Brown](https://amzn.to/2L2qIGF] or Sukrin Gold
- ½ teaspoon blackstrap molasses (*optional, for colour and flavour, omit for fully sugar-free)
- ½ cup unsalted butter, softened (*Or use coconut oil for vegan.)
- 2 large eggs (*Use flax or chia egg for vegan.)
- ¼ cup coconut flour
- ¾ cup almond flour
- ¼ cup vanilla-flavoured whey isolate (*Or vegan protein powder for vegan.)
- 2 tablespoons golden flaxmeal
- ½ teaspoon glucomannan (*May sub xanthum gum but glucomannan is healthier.)
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground cloves
- ¼ teaspoon nutmeg, (freshly grated if possible)
- ¼ teaspoon Himalayan pink sea salt
- 2 teaspoons raw cider vinegar
- ½ cup unsweetened almond milk
Directions:
Preheat the oven to 350. Grease a 9" loaf pan andline with parchment paper (or use a silicon loaf pan). In a large mixing bowl, cream the butter and sweetener together with an electric mixer until light and fluffy. Add the eggs, one at a time, and mix well to combine.
In another mixing bowl, whisk together all the dry ingredients, making sure you break up any lumps in the flours. Add the dry ingredients to the wet ingredients, and stir until just combine. Gently stir in the almond milk and cider vinegar until smooth.
Spoon the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to fully cool on a cooling rack before turning it out and slicing it.
