Looking for ways to enjoy tiger nuts for breakfast? Try them in this carb-up golden tiger nut overnight oats recipe! They add a lovely texture similar to chestnuts, along with the warming flavours you expect from a golden turmeric tea beverage. Top with raisins for cheeriness and roast pistachios for crunch and you get a lovely breakfast with all sorts of wonderful textures.
Carb-up Golden Tiger Nut Oatmeal (Overnight or On the Spot) Recipe
- ½ cup tiger nuts, soaked in 1 cup water and ¼ teaspoon fine sea salt and for 24-48 hours
- 2 teaspoons golden flaxmeal
- 1 medium banana
- 1½ teaspoons orange zest
- 1⅓ cup unsweetened coconut milk beverage (*Or any non-dairy milk.)
- ¾ tsp ground turmeric
- ¼ teaspoon ground ginger
- One pinch of cardamom powder
- ½ teaspoon ground cinnamon
- ½ cup rolled oats
- 1 tablespoon vegan vanilla protein powder
Add all ingredients, except the oats and toppings, to a blender and pulse until mixture gets an oatmeal-like consistency.
Add oats and gently pulse in the oats until just incorporated. Heat in a small sauce pan over medium heat or in the microwave. Alternatively, you can cover it in a bowl and store in the fridge overnight. When ready to eat, stir and serve topped with raisins and chopped pistachios. (*Note: If you want to get the benefits of the resistant starch in the oats, heating it up then allowing it to cool will bring out its benefits more. Then you can heat it up again if you want to eat it hot.)
