I just LOVE doing chicken in my air fryer! Crispy in the outside, juicy on the inside, I don’t miss deep frying at all with this new tool. So here’s my keto-friendly imitation KFC air fried chicken recipe for you to try! I got this fantastic Cuisinart combination air-fryer, convection oven, toaster oven if you’re looking for a good one.

Keto Imitation KFC Air-Fried Chicken

Ingredients:

  1. Whisk together coconut flour, salt, white and black pepper in a medium shallow bowl. Set aside. In a second medium bowl, whisk together the egg and almond milk. Set aside. In a third bowl, mix the crushed pork rinds and remaining spices.

  2. Dredge the chicken pieces in the coconut flour mixture, dip in the egg mixture, shake off the excess, then press into the pork rind crumbs. Keep the majority of the third mixture in a separate bowl and add as needed to prevent the pork rinds from clumping in a gooey mess.

  3. Preheat the air fryer at 400F for 5 minutes. Lightly grease the basket with coconut oil and arrange the breaded chicken on it in a single layer, without touching. Drizzle the remaining coconut oil over top of the chicken pieces.

  4. Put the basket into the air fryer. Cook the chicken in the air fryer for 18-20 minutes, until it reaches an internal temperature of 165F. (*Note: If the crust starts to darken too much but the chicken isn’t quite cooked through, tent the chicken with a piece of aluminum foil for the remainder of the cooking time.)
