Keto Imitation KFC Air-Fried Chicken
- 1½ lb chicken drumsticks (around 7-8 pieces)
- 2 tablespoon coconut flour
- ¾ tsp Himalayan pink sea salt
- ½ tsp white pepper
- ¼ freshly ground black pepper
- 1 large egg
- ⅔ cup (43g) pork rinds, finely ground into crumbs
- 2 tablespoons unsweetened almond milk
- ¾ teaspoon paprika
- ¾ teaspoon garlic salt
- ¼ teaspoon dried thyme
- ¼ teaspoon ground mustard
- ¼ teaspoon https://amzn.to/2Vk3oeB
- ⅛ teaspoon https://amzn.to/2VQUkxg
- ⅛ teaspoon dried oregano
- ⅛ teaspoon ground ginger
- 2 tablespoons coconut oil, melted
Whisk together coconut flour, salt, white and black pepper in a medium shallow bowl. Set aside. In a second medium bowl, whisk together the egg and almond milk. Set aside. In a third bowl, mix the crushed pork rinds and remaining spices.
Dredge the chicken pieces in the coconut flour mixture, dip in the egg mixture, shake off the excess, then press into the pork rind crumbs. Keep the majority of the third mixture in a separate bowl and add as needed to prevent the pork rinds from clumping in a gooey mess.
Preheat the air fryer at 400F for 5 minutes. Lightly grease the basket with coconut oil and arrange the breaded chicken on it in a single layer, without touching. Drizzle the remaining coconut oil over top of the chicken pieces.
Put the basket into the air fryer. Cook the chicken in the air fryer for 18-20 minutes, until it reaches an internal temperature of 165F. (*Note: If the crust starts to darken too much but the chicken isn’t quite cooked through, tent the chicken with a piece of aluminum foil for the remainder of the cooking time.)
