I was looking for something in a neutral vanilla wafer cookie to use with sweet dips, like the crispy Nilla wafers, but low-carb and keto-friendly. A little experimentation led to this recipe. Bring on the keto sweet dips! :)
Keto Imitation Nilla Vanilla Wafer Cookies Recipe
Ingredients:
- 1/3 cup coconut flour
- 1/4 cup vanilla-flavoured whey isolate
- ½ cup blanched fine almond flour
- ¼ teaspoon baking soda
- ⅛ teaspoon xanthum gum
- ⅛ teaspoon Himalayan pink sea salt
- 2/3 cup unsalted butter (softened)
- 2 1/2 tablespoons erithrytol, powdered in a spice/coffee grinder
- 1 large egg, room temperature
- 1 tablepoon pure vanilla extract
- 10 drops liquid stevia (vanilla-flavoured if you have it)
Directions:
In a small bowl whisk together coconut flour, whey isolate, almond flour, baking soda, xanthum gum and salt.
Preheat oven to 325F. In a medium sized bowl, cream the butter and erithrytol with a mixer set to medium. Add eggs one at a time, beating well between additions. Add vanilla extract and liquid stevia and mix until fully incorporated.
Mix the dry ingredients into the wet until just incorporated.
Scoop ½ to 1 inch balls of dough onto a parchment lined baking sheet. Flatten dough balls into discs with wet fingers and smooth the tops as these cookies don’t spread much when baked.
Bake for 14-17 minutes or until the edges are golden. Allow cookies to cool on the baking sheet for 5 min then transfer to a cooling rack to cool completely.
