I really enjoyed my chocolate black cherry black rice pudding recipe, but decided I wanted to try a different take on it for last week's carb-up. I went with a strawberry cardamom black rice instead. Just as easy to make, I just swapped out a few ingredients. And it was just as tasty!

Carb-Up Instant Pot Strawberry Cardamom Black Rice Pudding Recipe

Ingredients:

Directions:

  1. In an Instant Pot, combine rice, water, cardamom pods, and salt. Lock the lid in place and select 'High Pressure' and 22 minutes cook time. When beep sounds turn off pressure cooker and use a natural pressure release for 10 minutes. After 10 minutes, release any remaining pressure with a quick pressure release.

  2. Add chosen milk, vanilla protein powder, cardamom, and golden sweetener to rice in pressure cooking pot. Select 'Saute' and heat until all ingredients are dissolved, stirring occasionally, until mixture just starts to boil. Turn off pressure cooker. Stir in strawberries and vanilla extract.

  3. Serve immediately, or pour into serving dishes cool then chill. (*Note: If you want to get the benefits of the resistant starch in the oats, allowing it to fully cool will bring out its benefits more. Then you can heat it up again if you want to eat it hot. As the pudding cools, it will thicken as it cools, so you may want to add a little of your chosen milk or some yogurt if serving cold.)
