
Having a bunch of different recipes for keto wings is great for any party where you want to have lots of different finger foods, like game nights, or in my case gaming nights. Jamaican jerk wings are an awesome choice that combines spicy and sweet, and is dairy free, so you have something other than Buffalo wings for people who can’t handle the butter. And of course, you can use this marinade for any other kind of chicken, like drumsticks or thighs.
Keto Jamaican Jerk Wings Recipe
- 5 lbs chicken wings
- 2 limes, juiced
- 4 green onions, chopped
- ⅛ teaspoon orange extract
- ¼ cup water
- ⅓ cup olive oil
- ½ teaspoon fine sea salt
- 1 tablespoon tamari soy sauce or coconut aminos
- 1 tablespoon Swerve Brown
- 1 small scotch bonnet pepper, stem removed (*Or Habanero if unavailable. Remove seeds and pith if you prefer it less spicy.)
- 1 cup yellow onion, chopped
- 3 cloves garlic, smashed
- One 2” piece fresh ginger, chopped
- 1 teaspoon ground allspice
- ½ teaspoon ground cinnamon
- ½ teaspoon nutmeg (freshly grated if possible)
- Leaves from 10 sprigs fresh thyme
Directions:
Add yellow onion, green onions, garlic, habanero peppers, fresh thyme, salt, black pepper, allspice, thyme, cinnamon, cumin, nutmeg, oil, soy sauce, Swerve Brown, and lime juice to a blender and blend until completely smooth.
Place chicken in a large bowl. Pour marinade over chicken and toss to coat completely. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 8 hours or overnight.
Preheat oven to 450 degrees F (230 degrees C). Add grill tray sprayed with cooking spray to a baking tray.
Place chicken wings on prepared baking tray and coating it with marinade from the bowl. (*Note: Depending on the size of your baking tray, you may need to do this in batches, if making the full 5lbs of wings.) Bake in the preheated oven for 25 minutes.
Brush ½ the reserved marinade onto chicken and turn wings over. Bake for 15 minutes. Turn chicken and brush on remaining marinade. Bake until tender and caramelized, 5-10 minutes more or until an instant-read thermometer inserted near the bone reads 165F. Rest wings on baking sheet for 5 minutes before removing to a serving platter.
