Sweet and tart, lemon poppyseed dressing is a great choices for spring and summer salads featuring fruit. It also doubles as a killer marinade for chicken and fish so you can use it on your main dish AND your side in the same meal.

Vegan Keto Lemon Poppy Seed Dressing and Marinade Recipe

  1. Set the poppy seeds aside and add all the other ingredients in a high-speed blender. Blend on high for 20-30 seconds or until smooth with a pale yellow colour. Alternatively, you can do it using an immersion blender with a cup.

  2. Add in the poppy seeds and pulse the blender a few times to combine. Pour the dressing into an 8oz jar and refrigerate for at least 3 hours (or overnight) to allow the flavours to mingle.
