I am so glad that black soy beans have found their way into my life! Now I can pull out all my favourite bean-based dishes, like this classic Mexican black bean side dish, and bring them back in a low-carb, Keto-friendly form to my taco nights!
Keto Mexican Black Soy Beans Recipe
Ingredients:
- 3 tablespoons avocado oil or olive oil
- 1/2 cup yellow onions, finely chopped
- 3 cloves garlic, minced
- One 14oz can of black soy beans (*do not drain)
- ¼ cup cilantro, chopped
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon smoked paprika
- 3/4 teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Directions:
In a small sauce pan, heat the olive oil over medium heat. Add the onions and garlic and cook for 3-4 minutes, until the onions just begin to soften.
Add the undrained black soy beans, cilantro, cumin, paprika and salt. Stir well and reduce heat to medium-low. Allow to cook for 15-20 minutes, stirring occasionally. Taste and adjust seasonings to your preference.
Serve sprinkled with more chopped cilantro and crumbled cotija cheese if desired. Add to tacos or serve as a side dish for any Keto Mexican meal.
