My husband used to love raisin bread, but even though I’ve dialled in my keto bread recipe, raisins are just inherently “un-keto.” The trick is to find a dried fruit with a similar consistency but without all the sugar, natural or otherwise. Enter mulberries for the win. Mulberries, like most berries, are lower in sugar, yet they have a similar consistency to raisins when dried. Like other berries, they are rich in anti-oxidants, but they also have the added benefit of improving blood sugar control. More info on the nutritional benefits of mulberries. This recipe uses my eggless keto bread recipe as a base, adding in cinnamon and nutmeg with the butter, along with the dried mulberries.
Keto Mulberry Bread Recipe
Ingredients:
- 2¾ cups almond flour
- 1¾ cups unflavoured whey isolate
- 1 tablespoon xanthum gum
- 1 tablepoon baking powder
- ½ teaspoon Himalayan pink sea salt
- ¼ cup unsalted butter, melted
- ¾ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 250ml warm water
- 10 drops liquid stevia
- 2 teaspoons raw cider vinegar
- ½ cup dried mulberries (*Try to get black instead of white mulberries is you can as they are slightly lower in sugar, or use slightly less of them if white is all you can get.]
Directions:
Preheat oven to 375F. Whisk together the dry ingredients in a medium mixing bowl. Stir cinnamon and nutmeg in with the melted butter then mix butter into flour mixture using a spatula. Gradually stir in the water combined with cider vinegar and liquid stevia until you get a dough.
Pour into a 9x5” silicon loaf pan or a regular pan lined with parchment paper. Sprinkle a little extra cinnamon and nutmeg on top for garnish if desired.
Bake in an preheated oven for 20-25 minutes. Allow to cool for 5-10 minutes then turn out to cool fully on a cooling rack. Serve with a high-fat spread like butter, cream cheese or your favourite nut or seed butter.
