I was in the mood for the classic taste of a Philly cheesesteak sandwich and was faced with two choices for my keto version; using keto bread and never be 100% satisfied by the texture, or find a suitable vegetable vessel that won’t make me face the comparison. Since many cheesesteak sandwiches come with bell peppers it occurred to me that stuffing peppers with the cheesesteak was the perfect solution. And so this recipe came to be.

Ingredients:

  • 3 tablespoons avocado oil
  • ½ pound beef ribeye, sirloin or flank steak cut into thin strips
  • 2 medium bell peppers, sliced in half lengthwise, seeds removed
  • ¾ cup yellow or red onion, sliced
  • 3 oz mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 1 large clove garlic, minced
  • 1 cup provolone cheese, grated
  • Fine sea salt and freshly ground black pepper (to taste)

Directions:

  1. Preheat the oven to 400F. Place the peppers on a baking tray lined with a silicone mat and roast for 20 minutes. Set aside.

  2. Add 1 tablespoon avocado oil to a large skillet and set to high heat. Add steak slices, breaking it up with a spatula until cooked through. If using a smaller skillet, do this in batches to avoid steaming the meat. Once fully cooked, remove and add to a plate.

  3. Remove excess grease from the skillet if there’s any. Add butter and remaining oil and heat to medium. Once butter is fully melted and bubbling, add onions, mushrooms, salt and pepper. Saute for 5-6 minutes, or until caramelized. Add minced garlic and sauté until fragrant, then add the beef back in and hit the whole thing with a little more salt and pepper. Turn off heat but leave the skillet on the element. Add ¾ cup of the grated cheese and stir throughout.

  4. Fill each pepper half to overflowing. Sprinkle remaining cheese on top of each half. Put baking tray with stuffed peppers back in the oven and roast for 10 minutes or until the cheese is melted and and bubbly. Top with fresh chopped parsley and serve hot.
