
I didn't grow up eating a lot of stews, but I've been reading a lot about the benefits of cooking meats, especially ones with bones on them for the added collagen. I decided to try making my own Polish-style pork goulash. It's already an inherently keto meal, other than the dredging flour, but that was an easy swap to make using coconut flour instead of wheat flour. There's something inherently appealing about having a meal slow cooking all day over low temperature, filling your home with the smells of the meal, causing you to look forward to it with greater anticipation.
Keto Polish Pork Goulash Recipe
- 2 lb pork rib ends, chopped into bite-sized pieces (bones left attached)
- ⅓ cup coconut flour
- Kosher salt and freshly ground black pepper, to taste
- 3 tablespoons avocado oil
- 1 cup yellow onion, chopped
- 2 cups bell peppers, thinly sliced
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1¾ cup pork and/or beef bone broth
- 2 tablespoons tomato paste
- 2 tablespoons smoked paprika
- ¼ teaspoon [freshly ground freshly ground black pepper (or to taste)
- 6 whole allspice berries
- ¼ cup dry red wine
- ⅓ cup cold water
- 3 tablespoons oat fibre
Directions:
Season the pork pieces with salt and pepper and put them back in the fridge uncovered for at least 2-3 hours (or overnight).
Dredge pork in coconut flour. In a large saucepan heated to medium (or Instant Pot set to sauté), brown pork cubes in hot oil in 2-3 separate batches.
Remove pork and brown onions and peppers, adding mushrooms and garlic just before they’re finished. Sauté until mushrooms are browned and garlic is fragrant. After multiple batches of meat, there will likely be a dark brown crust on the bottom of the pan. That's totally fine. It will loosen and dissolve in the liquids you'll be adding to make the broth even more flavourful.
Return pork to the pan and add broth, tomato paste, paprika, pepper, allspice and wine. Simmer covered 60-90 minutes (Or set Instant Pot to 'Slow Cook' for 3-4 hours.)
In a small bowl, blend water with oat fibre. Add to goulash and simmer for 15-30 minutes more (*or 'Slow Cook' in the Instant Pot for the same amount of time.) Serve spooned over plainly seasoned rutabaga hash, cauliflower rice, or serve with a side of keto bread.
