Pork Chop Ingredients:

Creamy Herb and Wine Sauce:

Directions:

  1. In a large bowl, whisk together oat fibre, garlic powder, onion powder, thyme, sage and ground mustard, and season generously with salt and pepper. Dredge pork chops thoroughly in dredging mixture.

  2. Heat butter in a large skillet over medium-high heat. Once hot, add pork chops and sear the first side, cooking for 3-4 minutes. Reduce heat to medium, flip the chops then sear the other side, cooking another 3-4 minutes. Remove pork from heat and transfer to a plate. Cover to keep warm.

  3. Return skillet to heat, add 2 tablespoons butter and minced garlic and cook for 1-2 minutes on medium heat. Whisk in 1 tablespoon of leftover dredging mixture to the butter mixture until thick and foamy

  4. Whisk in the broth a little at a time then add the wine and lemon juice. Allow to heat for a minute then whisk in the and heavy cream. Stir in thyme, sage and ground mustard and a little salt and pepper, then simmer for 2-3 minutes or until thickened to desired consistency. Taste the sauce and add more seasoning if necessary.

  5. Return pork chops to pan. Drizzle some of the sauce over pork chops and reheat on low for 2-3 minutes or until pork chops are cooked to desired doneness. Serve with sauce poured overtop the chops. Garnish with fresh cilantro if desired.
