Here’s a great every day spread that I created around two healthy key ingredients: sardines and goat cheese. With a little added crunch from buttery pine nuts, you’ll forget that’s you’re eating healthy with this Keto-friendly, low-carb snack.

Sardine and Goat Cheese Spread Recipe

Ingredients:

  • 1 5-oz can sardines fillets packed in water, drained, back bone removed and flaked
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 2 tablespoons unsweetened almond milk
  • 3 oz goat cheese (*Cream cheese also works.)
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon garlic powder
  • 1 teaspoon minced shallot (or yellow onion)
  • 1 tablespoon minced chives, plus a few extra for garnish
  • ½ teaspoon tarragon
  • 1/4 cup pine nuts (*May sub chopped macadamia nuts or pistachios.)
  • 1 pinch cayenne

Directions:

  1. In a small mixing bowl, combine sardines chives, garlic powder and shallot. Add lemon juice, Dijon mustard, salt, pepper and cayenne pepper. Mix well.

  2. In another bowl, whip your cheese with the almond milk until its smooth and stir it into the sardine mixture. Mix until you have the desired consistency, whether you prefer a coarse or smoother consistency.

  3. Taste and adjust seasoning, adding more lemon juice, salt and pepper as needed. Stir in the nuts just before serving to keep them crunchy. Top with additional chives for garnish.
