I was looking for a quick and easy way to eat sardines hot. I happened to have some leftover stewed tomatoes and fresh basil and came up with this recipe on the fly. I was quite pleased with it. The fresh basil adds a nice, fresh touch. If you like to have additional strong flavours to pair with the strong flavour of the sardines, definitely go for the additional capers, Parmesan and/or red chiles garnishes.

Keto Sardines with Stewed Tomatoes Recipe

  1. Heat a 5” skillet to medium heat. Add avocado oil then add onions and garlic until fragrant then add tomatoes.

  2. When water comes out from the tomatoes and is thickened, add the sardines. Cook for about 5 minutes at medium heat then season salt and pepper to taste. Remove from heat and drizzle on olive oil then top with fresh basil, capers, red chiles and Parmesan cheese (if desired).
