Saskatoon berries (also known as June berries) have a subtle, versatile flavour that pairs beautifully with lemon. And when cooked and blended, their seeds thicken up the jam without having to add any chia seeds or pectin. This Saskatoon jam makes a wonderful spread for keto toast, keto bagels or a flavourful topping for yogurt or ice cream.
Keto Saskatoon/June Berry Jam Recipe
Ingredients:
- 4 cups Saskatoon/June berries
- 4 teaspoons erithrytol, powdered in a spice/coffee grinder
- ½ teaspoon liquid stevia, or to taste
- ¼ cup water
- Juice and zest of 1 lemon
Directions:
Add Saskatoon berries to a large heavy sauce pan. Heat the berries on a medium heat until the juice starts to seep from them.
Add in the erithrytol and the water and bring to a boil making sure to stir constantly. Once you have brought it to a boil, cook, stirring frequently until thick, around 15 minutes.
Remove from heat and stir in lemon juice, lemon zest and liquid stevia drops. Allow to cool for around 10 minutes
Remove some of the berries if you like a chunkier texture, then add the rest of the mixture to a blender and blend until smooth. Stir the whole berries back in to the blended jam.
Pour into hot sterilized jars, leaving ¼” of space at the top. Wipe jar rims thoroughly. Seal and process in a boiling water bath for 10 minutes. Makes around 2 cups.
