I decided to throw this recipe together using ingredients I had kicking around in my fridge and cupboard. I figured that marrying smoked salmon, avocado and capers with a caprese salad would be both low-carb and super tasty. I figured right.

Keto Smoked Salmon Avocado Caprese Salad Recipe

Ingredients:

  • 1 cup arugula or baby spinach leaves
  • 4 oz smoked salmon fillet
  • ½ small avocado, sliced
  • ½ Roma tomato, sliced (or ¼ pint of grape tomatoes)
  • 2 oz fresh mozzarella, drained and cut into bite-sized pieces (*I used buffalo mozzarella.)
  • 2 tablespoons firmly-packed fresh basil leaves, chopped
  • ½ tablespoon capers, drained
  • 1½ tablespoons extra virgin olive oil, divided
  • 1 tablespoon white balsamic vinegar
  • [Flaky sea salt (like Maldon or Fleur de sel and freshly ground freshly ground black pepper (to taste)

Directions:

  1. Using a plate or a wide shallow bowl, cover the base with the arugula or spinach leaves. Add mozzarella pieces, sliced avocado, sliced tomato, salmon fillet, then sprinkle with capers, and chopped basil.

  2. Drizzle with olive oil, balsamic vinegar, flaky sea salt and black pepper and serve.
