
Looking for something different in a sandwich? This spicy shrimp salad sandwich has all the right moves in a combination you might not have thought to try. Adding a little chipotle into the shrimp salad gives it a bit of zing, then topping it with crispy bacon, creamy avocado and baby spinach or arugula for added freshness. Toasting the bread adds even more dimension. Give it a try for your next lunch!
Keto Spicy Shrimp Salad Sandwich with Bacon and Avocado Recipe
Ingredients:
- 160g cooked shrimp, peeled and deveined (if using larger shrimp, chop into pieces)
- ¼ cup mayonnaise
- 1-2 teaspoons chipotle sauce (to taste)
- 1 teaspoon lime juice, freshly squeezed
- ¼ cup celery, finely chopped
- 2 tablespoons red onion, finely chopped
- 1 tablespoon fresh cilantro, chopped
- 4 slices bacon, cooked
- 1 avocado, sliced
- 1 cup baby spinach or arugula leaves
- 4 slices of keto bread or 2 keto buns, slice and toasted
- Flaky sea salt (like Maldon or Fleur de sel and freshly ground freshly ground black pepper (to taste), to taste
Directions:
Stir the mayonnaise, chipotle sauce, lime juice, celery and onion in a large bowl. Add the shrimp and cilantro and stir to coat. Cover and refrigerate for 30 minutes.
Divide shrimp salad, bacon, and avocado over 2 bread slices. Sprinkle avocado with flaky sea salt and black pepper. Top with your chosen greens and the remaining bread slices.
