
I was looking for a more liquid meal on a carb-up day since I was struggling to eat due to a tooth issue I was having, but I wanted it to be filling. I stumbled on the idea of an oatmeal smoothie, and thought it was genius. It's basically a drinkable version of overnight oats. Of course, I ensured that my soaking process allowed the oats to ferment, thereby breaking down the fibres and making the nutrients more accessible, adding in a little fat from coconut oil to help it be more easily absorbed.
Vegan Carb-Up Strawberry Banana Fermented Oatmeal Smoothie Recipe
Ingredients:
- ¼ cup gluten-free organic rolled oats
- 1 tablespoon probiotic yogurt or raw cider vinegar
- ⅓ cup lukewarm water (105-110F)
- Pinch of fine sea salt
- 1 teaspoon extra virgin coconut oil
- 1 cup frozen strawberries
- ¾ cup unsweetened coconut milk beverage (*Or any non-dairy milk.)
- ¼ cup coconut milk yogurt or 0% fat Greek yogurt
- 2 tablespoons vegan vanilla protein powder
- ½ teaspoon ground cinnamon
- ¼ cup frozen banana
- 1 teaspoon raw honey (OR sugar-free honey substitute if you prefer.) (*Optional, adjust to taste)
Directions:
Stir together oats and yogurt or raw cider vinegar and water in a small bowl. Cover with a kitchen towel and allow to soak at room temperature for 8-24 hours.
Drain. Add oats and salt to a small pot and cover with enough fresh water to cover the oats, and bring to a simmer over medium heat. Lower heat to low and allow to simmer for 5 min. Remove from heat and stir in coconut oil. Allow to cool completely.
Add oats and all remaining ingredients to a blender. Blend until smooth. Taste and adjust to preferred sweetness. Top with a little extra ground cinnamon if desired and enjoy!
