
Looking for a nice, summery sweet dip for a BBQ or just to enjoy on the patio? This strawberry cheesecake dip makes for a tasty snack or casual dessert that you can enjoy any time. Enjoy it with a batch of keto graham crackers, short bread cookies or vanilla wafers, or just eat it with a spoon right out of the bowl!
Keto Strawberry Cheesecake Dip Recipe
Ingredients:
- 1 cup cream cheese, room temperature
- ½ cup heavy cream
- ½ cup fresh strawberries stems removed and diced, reserving 1 tablespoon for garnish
- ¼ teaspoon liquid stevia
- ⅛ teaspoon strawberry extract
- ⅛ teaspoon cardamom powder
- Large of pinch Himalayan pink sea salt
Directions:
Add the cream cheese and half the strawberries to medium mixing bowl and mix with an electric mixer on high until smooth, scraping down the sides with a spatula if necessary.
Add in heavy cream and blend on high until well incorporated.
Add in remaining strawberries (not including ones reserved for garnish) and pulse on low just to mix the strawberries throughout.
Add the strawberry extract, cardamom, liquid stevia and salt and mix on low. Taste and adjust sweetness if needed.
Pour into a serving bowl. Top with remaining diced strawberries and another sprinkle of cardamom. Keep refrigerated until ready to serve. Serve with keto graham crackers, keto shortbread cookies, or whatever else you like.
