The unseasonably warm, sunny weather yesterday reminded me of how it felt to enjoy the sun every day while in Mexico, inspiring me to make a refreshing tropical cocktail. I took a stab at making this sugar-free version of the paloma, a beloved Mexcian cocktail.
Keto Sugarless Paloma Recipe
- 6oz sugar-free grapefruit-flavoured soda
- 2 oz white tequila
- 1 teaspoon fresh lime juice
- 5 drops liquid stevia, or to taste
- Ice cubes
- 1 teaspoon flaky sea salt (like Maldon or Fleur de sel
- 1 teaspoon Lakanto Golden Sweetener
- 1 teaspoon finely grated grapefruit zest
Stir together the salt, sweetener, and grapefruit zest. Use as is, or allow the grapefruit zest to infuse the other ingredients for 10 minutes and then sift out the zest before using. Run a wedge of lime or grapefruit around the rim of the 12 oz glass, then dip upside down into the salt mixture to coat.
Fill the glass with ice cubes. Pour in the soda, tequila, lime juice and liquid stevia and stir. Garnish with lime or grapefruit wedge and serve.
