This carb-up side dish is a favourite of mine because it combines sweet potato, a nutritional powerhouse, and sauerkraut, packed with probiotics, which are great for gut health. And the spice gives it the flavour without needing much in the way of fat. Baked on a baking rack with cooking spray for lubricant, the fries get nice and crispy without deep-frying. It’s basically a super-healthy version of chili fries.

Carb-Up Sweet Potato Fries with Sriracha Mayo Sauerkraut Recipe

Ingredients:

Directions:

  1. Peel the sweet potato and cut it into strips. Soak the sweet potato strips in cold water for 2 hours.

  2. Preheat your oven or air fryer to 425F. Mix all spices (except salt) together in a large container. Spray sweet potato fries with cooking spray and add to container. Close it up and shake all the spices together with the fries.

  3. Spread the fries out on a raised baking rack placed on a baking tray. If you don’t a baking rack, place them on a baking tray lines with a silicon mat (you’ll have to flip them halfway through cooking if you don’t have a rack). Bake for 25-30 minutes, rotating the tray halfway through.

  4. While the fries are baking, prepare the sririacha sauerkraut by combining sriracha, sauerkraut and mayo. Add salt to taste.

  5. Remove fries from the oven, add salt to taste. Serve the fries with sriracha sauerkraut on top and top with fresh cilantro and garnish with sesame seeds, chili flakes and sriracha. Put it in your mouth ASAP!
