Every year, President's Choice does this holiday ice cream flavour, Candy Cane Chocolate Fudge Crackle that is to die for. I would buy multiple containers of this stuff over the season. This is my first keto Christmas but I decided that I just couldn't live without this special treat, so I have made THE PERFECT IMITATION of this amazing ice cream! I am so excited about it. It turned out exactly right the first time I tried. The only difference I noticed is that the chocolate fudge crackles are a darker, richer (and therefore better) chocolate. You might wonder is it really worth it to go through this much effort to imitate this ice cream flavour. Just trust me! It really, really is!!! It's the holidays! This is the time to put a little more time and energy into a truly wonderful treat!
Candy Cane Chocolate Fudge Crackle Keto Ice Cream Recipe
Ingredients:
- 1 batch of Shape-As-You-Like Keto Chocolate, shaped into crackles (*see below for directions)
- 1 batch of Scoopable Keto Vanilla Ice Cream
- 1/3 cup sugar-free peppermint candies, crushed (*I put them between two silicon mats used a meat tenderizer.)
- 1/2 teaspoon peppermint extract
Directions:
Follow the directions for making the shape-as-you-like chocolate. Put the pyrex glass with the chocolate mix into the freezer for 5 minutes to cool it down then pour it into a decorating bag then cut off the tip. Squeeze the chocolate out into crackle shapes on a cookie sheet lined with a silicon mat. Alternatively, if you have a careful hand, you can just pour the chocolate directly from the pyrex measuring cup if you're not too stuck on having the crackles look more ubiquitous. Put in the freezer for 1 hour or more to set.
Make a batch of scoopable keto vanilla ice cream as per the directions, adding the peppermint extract at the same time as the vanilla extract. Stop the ice cream machine once it has reached a soft-serve consistency and transfer into a wide container.
Stir in the chocolate fudge crackles and crushed peppermint candy in batches to achieve an even consistency. Freeze overnight before serving.
