This is one of my favourite carb-up desserts. It combines highly nutritious black glutinous rice, a quality fat-free protein source, and the delicious combo of chocolate and cherry flavours, making it a high carb, low fat dessert that hits the pleasure centres you want in a dessert without missing the richness of fat you come to expect from your favourite keto desserts. Forbidden rice is also known as 'black rice' but I feel that calling it "forbidden" really works for a carb-up recipe. ;)

Chocolate Cherry Forbidden Rice Pudding Carb-Up Recipe

  1. In an Instant Pot, combine rice, water, and salt. Lock the lid in place and select 'High Pressure' and 22 minutes cook time. When beep sounds turn off pressure cooker and use a natural pressure release for 10 minutes. After 10 minutes, release any remaining pressure with a quick pressure release.

  2. Add almond milk, chocolate whey protein, cocoa powder, vanilla extract, and coconut sugar to rice in pressure cooking pot. Select 'Saute' and heat until all ingredients are dissolved, stirring occasionally. Cook, stirring constantly, until mixture just starts to boil. Turn off pressure cooker. Stir in cherries.

  3. Serve immediately, or pour into serving dishes cool then chill. (*Note: If you want to get the benefits of the resistant starch in the oats, allowing it to fully cool will bring out its benefits more. Then you can heat it up again if you want to eat it hot. As the pudding cools, it will thicken as it cools, so you may want to add a little of your chosen milk or some yogurt if serving cold.)
