I wanted to make a special birthday cake for a friend of mine who is in love with Oreo cookie ice cream. I figured a keto cookies and cream frozen pudding cake would be an apt creation with which to celebrate. And so this recipe was born.
Keto Cookies & Cream Frozen Pudding Cake Recipe
Ingredients:
- 6oz cream cheese, softened
- 3 tablespoons erithrytol, powdered in a spice/coffee grinder
- 10 drops liquid stevia (vanilla-flavoured if you have it)
- ⅔ cup heavy cream
- Keto instant chocolate pudding mix (*or a small box of instant chocolate pudding works too)
- ½ cup unsweetened almond milk
- 1 teaspoon pure vanilla extract
- 8-10 Keto Oreo Cookies, chopped
Directions:
In a medium bowl, whisk together pudding mix and almond milk and allow to set in the fridge for 30 minutes.
In a large mixing bowl, use an electric mixer to beat cream cheese, heavy cream, powdered erithrytol until fluffy. Gently stir in the liquid stevia.
Gently fold in half of the cream cheese/whipped cream mixture into the pudding mixture.
Pour chocolate pudding mixture into a loaf pan lined with parchment paper and sprayed with coconut oil spray. Sprinkle half of the chopped Oreos over the chocolate pudding mixture. Gently spread cream cheese/whipped cream mixture over the Oreos. Top with remaining cookies.
Cover with foil and place in the freezer overnight. Remove from freezer 20 minutes before serving. Cut and serve.
