While I was down in Washington State camping for the weekend, we visited a farmer’s market and I scored some really fresh broccoli and kohlrabi. I decided to use what I had with me to whip up this delectable salad, which turned out to be a huge hit. Make it for your next BBQ, picnic or camping trip!
Keto Creamy Broccoli Kohlrabi Salad Recipe
Dressing Ingredients:
- 1 tablespoon Boursin Garlic & Fine Herbs (or try one of the other flavours)
- 1 tablespoon mayonnaise
- 1½ tablespoons sour cream
- 2 tablespoons sriracha mustard
- 1 tablespoon raw cider vinegar
- Flaky sea salt (like Maldon or Fleur de sel and freshly ground black pepper (to taste)
Salad Ingredients:
- 1½ cups fresh broccoli florets
- 1 cup kohlrabi, peeked and diced
- 2 large eggs, boiled and chopped
- ½ cup cheddar cheese, grated
- 2 tablespoons red onion, finely diced
- 10 pecan halves, chopped
- ¼ cup crispy bacon bits
Directions:
Whisk together all the salad dressing ingredients. Set aside.
Toss together all the ingredients for the salad in a medium mixing bowl, except the bacon bits.
Pour dressing over salad and toss to combine. Put in the fridge until ready to serve. Top with bacon bits and serve when ready.
