This Tuscan-inspired recipes marries together shrimp with a variety of flavours from the region, sun-dried tomatoes, spinach basil and hard Italian cheese, adding in heavy cream which comes more from a North American influence (we sure do like our dairy!). The result is a colourful cream sauce that goes well with a base of zucchini noodles or cauliflower rice.
Keto Creamy Tuscan Shrimp Recipe
Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter or ghee
- 1 lb shrimp, deveined, and tails removed
- Kosher sea salt and freshly ground black pepper, to taste
- 5 cloves garlic, finely chopped
- ½ tablespoon lemon zest
- ¾ teaspoon dried basil
- ¼ teaspoon crushed red pepper flakes (plus extra for garnish)
- ½ cup oil-packed sun-dried tomatoes, drained and chopped
- ½ cup white mushrooms, sliced
- 4 cups baby spinach
- ½ cup chicken bone broth
- ½ cup heavy cream
- ½ cup freshly grated Parmesan or pecorino Romano
- ¼ teaspoon glucomannan (*May sub xanthum gum, but glucomannan is healthier.) (optional)
- 1 tablespoon lemon juice, freshly squeezed
- 2 tablespoons fresh basil or parsley, chopped (for garnish)
Directions:
Heat oil and butter in a large skillet over medium-high heat. Once the oil is super hot and the butter has melted, add the shrimp and a generous sprinkle of salt & pepper, saute for 1 minute.
Remove shrimp from pan and set aside then add the garlic, dried basil, mushrooms and sundried tomatoes, Saute for 1 minute or until the garlic is fragrant. Add bone broth and bring to a simmer, allowing it to reduce slightly. Stir in spinach and sauté until wilted.
Stir in the heavy cream and cheese. Reduce heat to medium and simmer until sauce is slightly reduced about 2-3 minutes. If you prefer a thicker consistency, whisk in the glucomannan to thicken. Return the shrimp to the pan and stir to combine. Taste and adjust salt if needed. Serve over cauliflower rice or zucchini noodles.
