Curried fruit is a lovely dessert/condiment for roast turkey or ham from the southern states. I thought I could draw on that for inspiration for this carb-up pizza concept, curried mango dessert pizza. Mixing sweet and savoury curry notes with a creamy coconut cream cheese sauce made this dessert pizza a unique, yet winning combination that transcends the barriers of main dish and dessert. What makes this combo so special is that your brain can't draw on previous experience to run a script and tell you whether or not you like it. It puts you in the moment, forcing you to think about what your tasting and experience how the flavours, while presented in an unusual combination, are actually quite complementary. You just have to get past the strangeness of sweet combined with savoury, of associations usually expected from dessert combined with ones you usually expect with dinner. After a few bites of tasting and experiencing, if you give it a real chance, you'll probably find yourself liking it despite having no previous frame of reference from which to appreciate it beyond what you experience in the moment while you eat it.

Vegan Carb-up Curried Mango Pizza Recipe

*Coconut Cream Cheese Curry Sauce Ingredients

Pizza Ingredients:

  • One large naan bread (*Or 8" pizza crust of your choice.)
  • ⅔ cup fresh mango, diced (*Make sure it's fully ripe for best results.)
  • Large pinch cardamom powder
  • 1 tablespoon unsweetened shredded coconut, lightly toasted
  • 1 tablespoon fresh mint, chopped

Directions;

  1. Prepare pizza crust (if using) according to package directions.

  2. Spread coconut curry cream cheese curry sauce over crust. Arrange chopped mango over the cream cheese, and sprinkle with ground cardamom, then toasted coconut and pistachios. Lastly, sprinkle with sliced mint leaves. Slice and serve.
