You know what sucks? Trying to make keto versions of holiday baked goods that use dried cranberries. That’s because sugar-free dried cranberries simply don’t exist. The best option I’ve seen on the market is apple-juice infused ones, but even those still contain a lot of sugar. That’s why I decided to set about making my own sugar-free version of dried cranberries, using a keto-friendly sweetener to make them palatable for desserts. This recipe is fairly easy if you’re handy enough with a knife and don’t need your oven for a few hours.
Keto Dried Cranberries Recipe
- One 12 oz package fresh cranberries
- ⅓-½ cup Confectioner’s Swerve or other erithrytol-based sweetener powdered, (to taste)
- 2 tablespoons avocado oil
Preheat oven to 200F and line a rimmed baking sheet with parchment paper or a silicon mat.
Cut cranberries in half and toss in a bowl with sweetener and avocado oil.
Spread on prepared baking pan and try to create space around each berry as best you can. Put baking sheet in oven to dry, 4 hours or longer. Remove from oven, allow to cool and transfer to an airtight container in the fridge.
