It's all well and good to have recipes for meals and desserts, even more elaborate appies when the mood strikes, but sometimes you just want to have an easy snack that you can pull out when you have having cravings but don't have time for meal prep. Crackers, or if I don't have any keto flax crackers pre-prepared, cucumber "crackers" can be easily dressed up with a variety of easy, nutritious options rather than just hunks of straight cheese. Here are some of my go-to cracker snacks that I come back to time and time again:
1. Smoked Oysters and Boursin
Smoked oysters are a great keto protein source, containing all 9 essential amino acids and omega-3 fatty acids, which help keep your immune system strong and reduce inflammation. Boursin makes a variety of flavoured cream cheeses that pair well with oysters. My favourite choices are red chili pepper, pepper, or garlic and chive.
2. Pâté (Duck, Chicken and or Pork)
Made with a base of liver, pâté is a super simple, high-fat option that allows you to get in your organ meat, which is a great source of a variety of B vitamins, vitamin A, iron, folate and more micronutrients besides. If you want to class it up a bit with some fresh herbs, you can but it doesn't need it being so flavourful on it's on. Just spread it on flax crackers and chow down!
3. Pesto & Pickled Asparagus (or Sliced Kalmata Olives)
Made with a base of olive oil, basil, garlic, pine nuts and Parmesan cheese, pesto gives you a plethora of healthy fats. Add some pickled asparagus or a kalmata olive slice and you get some healthy pro-biotic foods, along with some added flavour and texture for your cracker snack.
4. Jalapeño Pepper Jelly and Cream Cheese
If you're craving something sweet and spicy, spread some cream cheese on a cracker and add a dab of [sugar-free jalapeño pepper jelly](sugar-free jalapeño pepper jelly). Granted, unless you can get this at a local store, you would have had to have made the jelly ahead of time, but if you have it ready to go, it jazzes up plain old cream cheese with an exciting blend of flavours for a snack you'll truly savour.
