French onion soup is a delicious, low-carb, keto-friendly soup that's perfect for welcoming the cooler temperatures of the fall season. With a rich bone broth as a base, a bunch of onions, topped with a slice of keto bread and melty cheese, this recipe does not skimp in the flavour department. It can take time to make, but it's a soup you'll savour.

Keto French Onion Soup Recipe

  1. Heat butter and olive oil to medium heat in a large skillet big enough to fit all the onions. Add the onions, season with salt and pepper, and cook on medium-high heat for about 10 minutes, stirring often. Reduce the heat to low and cook the onions for 30-40 minutes or until they are caramelized.

  2. In a separate pot, add beef broth, thyme, bay leaf, vinegar, and garlic. Turn on the heat to medium and add in the onions. Cook for 30-40 minutes or until soup is dark, thick and flavourful. Add extra salt and pepper to taste. Preheat broiler on low or 450F.

  3. Pour soup into 3 oven-proof bowls. Top with enough keto bread to cover the soup completely then sprinkle each bowl with ¼ cup of grated cheese. Put the bowls of soup in the oven and broil for 3-5 minutes, until the cheese has melted and has a nice golden colour.
