One of the things I missed most when I went keto was crackers. Being the cheese fiend that I am, I fell into a deep depression when I realized I would never again enjoy my favourite snack with their traditional crispy deliverance system. I tried one keto cracker recipe after another only to be disappointed by its complexity or its result... until I found the flax seed cracker! This recipe is super easy to make. You just have to make sure you prep the mix the night before so it has time to set.

Some people say that flax seeds are indigestible if they're not ground, but I read that if you soak them, it does make some of their nutrients, like protein, more available and easier to digest. More info on soaking flax seeds.

While many people add various herbs to these crackers, I like to keep them more plain. That way I can use them with any kind of cheese, as well as with both savoury AND sweet dips without having conflicting tastes.

Golden Flax Seed Cracker Recipe

Ingredients:

  • ½ cup flax seeds (*I think golden flax seeds are tastiest.)
  • ¼ cup water
  • 1/4 teaspoon Himalayan pink sea salt

Directions:

  1. Mix together all ingredients in a small mixing bowl. Cover and put in the fridge for 12 or more hours.

  2. Remove mixture from refrigerator and stir thoroughly.

  3. Spread flax seed mixture on a silicon mat or parchment paper. Place another mat or piece of parchment paper on top and roll out. Make them whatever thickness you like. The thinner they are, the crispier they'll be, but their structural integrity may be compromised if you go too thin. It's a fine balance you'll figure out over several batches.

  4. Bake at 275F for 60 minutes keeping the silicon mat or parchment paper on top. Check to make sure all the moisture has been dried out. If not, throw them back in until they are. Let them cool for 10 minutes.

  5. Break into pieces. They won't always be pretty, but they'll still be tasty. Remember: It's what's inside your mouth that counts! You'll probably get a few smaller pieces that just aren't big enough for crackers. Don't throw them out! Save those babies to use as croutons in a salad.

With golden flax seed crackers in hand, now you're ready to rock a keto wine and cheese party. Just make sure you pick up one of the low-carb wine varieties.
