I used to love picking up gyro wraps for lunch or for a late-night snack, so I thought why not try to capture those flavours in a cauliflower rice bowl form? I used ground lamb because I love lamb, but it could easily work with ground beef or other ground meats. The combinations of sweet and savoury along with the fresh herbs makes for a delicious, satisfying meal that captures the street meat taste that I know and love.

Keto Greek Gyro Cauliflower Rice Bowls Recipe

Ingredients for Spiced Ground Meat:

Ingredients for Gyro Bowls (Makes 2 bowls):

  • 2 cups cauliflower rice, cooked
  • 1 cup tomato, diced
  • 1 cup cucumber, peeled and diced
  • ¼ cup keto tzatziki or keto hummus
  • ¼ cup feta cheese, crumbled
  • 10 kalamata olives, pitted and sliced, sliced

Directions:

  1. Heat avocado oil in a large skillet and heat to medium. When oil is hot, add onions and garlic and a sprinkle of salt. Sauté for 3-4 minutes, until starting to soften.
    Add ground meat and brown until cooked through.

  2. Add paprika, allspice, red pepper flakes, ginger, salt and pepper. Mix until fully combined, cook for 1-2 minutes. Remove from heat and stir in fresh herbs.

  3. To assemble bowls (splitting the ingredients into 2 bowls), start with a layer of cauliflower rice, then top with some of the spiced ground lamb, tomatoes, cucumbers, hummus or tzatziki, feta and olives. Sprinkle with extra fresh mint and parsley if desired.
